  No, bypass mode is not required for the Ethernet Adapter to function. The Ethernet Adapter just gives you access to an Ethernet LAN port to connect devices.

• Does the Ethernet Adapter disable WiFi?

  No, installing the Starlink Ethernet Adapter does not disable the WiFi signal from the router. Everything will continue to function as before, you’ll just have the added feature of a LAN port to connect devices.
